Catering Equipment Training

The Aga Khan Academy, Mombasa is the first of a planned network of Aga Khan Academies dedicated to expanding access to education of an international standard of excellence in Asia and Africa. An open policy ensures access regardless of socio-economic status or other limiting factors: admission to the Academy is merit-based. The Academies will all feature residential campuses designed by renowned architects, be well-equipped and feature a cafeteria and dining room.

Aga Khan AcademyRadford Chancellor Ltd have been entrusted to provide the necessary culinary training, use of equipment and food safety training.

Each mission presents a unique set of challenges. Here we found a very dated and tired catering facility which was clearly under-equipped and with potential hygiene problems. It was time to get our whites on.

In order to get the real measure of what was required, a day was spent observing the current system in action. We were then able to pinpoint exactly what was needed and a suitable programme was devised. We had 22 people to train whilst maintaining full operations. 5 groups were formed and each were given a day to attend the following programme:

Extra training was needed for the key stakeholders which we delivered the following week.

We were then ready for our 'trial run'. The stewards were given a full run through of operations in the dishwash area. Meanwhile, the chefs were shown full culinary application, product testing and in-depth food safety with an intro to HACCP.

All training and equipment manuals were presented, carefully filed, labeled and left with project/site manager. Ali Group Training Certs and training record sheets were issued to the site manager.

Once up and running, we were able to address the following areas:
